Ingredients

  • 1 head garlic
  • 1 Tbsp. extra-virgin olive oil
  • 2 lb. Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 1 medium head cauliflower (about 2 lbs.) cut into large florets
  • 2/3 cup half-and-half
  • 6 Tbsp. butter
  • Snipped chives, for garnish (optional)

Directions

    1. Step 1Heat oven to 375°F. Cut top third from root end of garlic head. Working over sheet of foil, drizzle cut sides of garlic with oil. Reassemble head; wrap in foil, crimping and sealing tightly. Place on small baking sheet. Bake until golden brown and very soft, about 50 min. Remove from oven, carefully unwrap foil, and let garlic cool completely.
    2. Step 2While garlic cools, in 7- to 8-qt. pot, combine potatoes and 1 Tbsp salt with enough water to cover by 2 inches. Partially cover with lid and bring to a boil. Reduce heat and simmer 10 min. Add cauliflower and bring to a boil, uncovered, then reduce heat and simmer until vegetables are tender, 20 min. Drain well.
    3. Step 3Meanwhile, in small bowl, microwave half-and-half and butter on High, until butter has melted, 30 sec; squeeze roasted garlic cloves from skins into mixture.
    4. Step 4Mash potatoes and cauliflower with half-and-half mixture and 1/2 teaspoon salt until smooth. Sprinkle with chives (if using).
