Ingredients
1 Tbsp. vegetable oil
200 g smoked streaky bacon, cut into strips
275 g unsalted butter
200 g caster sugar
4 large eggs
150 g cocoa powder
1 tsp. vanilla extract
150 g plain flour
7 mini Cadbury creme eggs
Directions
Step 1Preheat oven to 180°C (160°C fan) mark 4. Grease and line a 20cm x 20cm tin. Heat the vegetable oil in a small frying pan. Fry the bacon until golden and crispy. Remove with a slotted spoon to a plate lined with kitchen roll and drain.
Step 2Melt the butter and sugar together in a pan over a medium heat. Pour into a large bowl and allow to cool slightly. Beat in the eggs, one at a time and then stir in the cocoa powder, vanilla and flour. Stir in most of the bacon. Pour into the tin and smooth the top. Sprinkle over remaining bacon, and push the crème eggs into the batter.
Step 3Bake for 25-30min until there is a slight wobble in the middle. Allow to cool in the tin completely on a wire rack. Then place into the fridge overnight to firm up. Cut into 16 squares and serve.
