450 ml fresh orange juice (from 3 to 4 navel oranges)
120 ml fresh lemon juice (from 3 to 4 lemons)
For serving
5 navel orange wheels, halved
50 whole cloves
1 750-mL bottle Prosecco rosé, chilled
240 ml
10 rosemary sprigs
Directions
Step 1Make ice ring: In Bundt tin, arrange bay leaves and citrus wheels in decorative pattern. Slowly and carefully (to keep pattern intact) add 470ml of water and freeze until solid, at least 3 hours. Once solid and pattern is set, fill with a further 1.2–1.4 litres more water depending on size of pan.
Step 2Make punch base: In large pitcher or jar, stir together Aperol, sweet vermouth, orange juice, and lemon juice to combine. Cover and refrigerate until ready to serve, up to 24 hours.
Step 3When ready to serve, using toothpick, poke 5 evenly spaced holes into the pith of each orange half. Insert 1 clove into each hole; set aside for garnish.
Step 4Into a punch bowl, pour punch base, then gently stir in Prosecco rosé and club soda.
Step 5To unmold ice ring, briefly dip outside of the pan into a large bowl of warm water until ice loosens. Place ice ring in centre of punch bowl.
Step 6Serve punch in ice-filled glasses. Garnish each serving with 1 clove-studded orange slice and 1 rosemary sprig.
