The Yorkshire pudding recipe that creates golden, sky-high puddings every time
These are the perfect side for Sunday lunch.

Perfectly puffed-up Yorkshire puddings are easily achieved with just a few simple tricks. Don’t forget to let the batter rest for a few hours for puds with skyscraper height, a crispy exterior and a chewy interior.
Ingredients
- 200 g plain flour
- 4 eggs
- 150 ml milk
- 150 ml beef dripping
Directions
- Step 1Combine the flour with a large pinch of salt in a large bowl. Combine the eggs, milk and 150ml cold water in a large jug. Gradually whisk into the dry ingredients until smooth, then transfer back to the jug. Cover loosely with clingfilm, transfer to the fridge and leave to rest for at least 5hr.
- Step 2Preheat the oven to 230°C (210°C fan ) mark 8. If you’re using beef dripping from roast beef, top up with vegetable oil until you have 150ml, or just use vegetable oil. Using a 12-hole muffin tin, divide the fat among the holes. Transfer to the oven and leave for 15min until hot.
- Step 3Remove the jug of batter from the fridge and give it a whisk. Leave for 5min. Carefully remove the tin from the oven and evenly fill each hole with the batter – you don’t want to fill more than ¾ of each hole, so you might find you have some batter leftover. The batter should sizzle on contact with the oil. Immediately transfer the tin to the oven and bake for 15min. Very quickly turn the tray around and bake for a further 10min or until golden brown and puffed up.
GET AHEAD:
The batter can be made up to 24hr ahead, which can deepen the flavour and create an even loftier pudding. Just be sure to store in the fridge.
GH TIP:
Why not add some flavour? Stir chopped herbs, such as rosemary or sage, into the batter, 1tsp English mustard powder or some crispy bacon bits.
