Ingredients

  • 1 lb. fingerling potatoes
  • 2 strip steaks, each about 1 inch thick
  • 2 Tbsp. unsalted softened butter
  • 1 Tbsp. prepared pesto
  • oil, salt and pepper
  • large rimmed baking sheet
  • 12-inch skillet

Directions

    1. Step 1Heat oven to 450°F. Scrub 1 pound fingerling potatoes with water; then, quarter each potato lengthwise. They should have the same shape as thick-cut French fries.
    2. Step 2On a large rimmed baking sheet, toss the fingerling potatoes with 1 tablespoon oil and 1/4 teaspoon salt. Transfer to the oven and roast until the fires are deep golden brown, about 20 minutes. Meanwhile, prepare the steaks.
    3. Step 3Season 2 strip steaks with 1/2 teaspoon salt and 1/2 teaspoon pepper. Heat a 12-inch skillet over medium-high heat for a minute, then add 1 tablespoon oil. Add the steaks to the skillet and cook until desired doneness. If you like your meat medium-rare, cook the steaks for about 3 minutes on each side. Transfer the cooked steak to a cutting board and let rest for at least 5 minutes before slicing.
    4. Step 4In a small bowl, combine 2 tablespoons softened butter with 1 tablespoon pesto. Serve the steaks with the French fries and pesto butter.
