Ingredients

  • 1 tsp. vegetable oil
  • 4 cloves garlic
  • 1 lb. green beans, cut into 1" pieces
  • 1/4 cup plus 2 tbsp. water
  • 1/4 tsp. Kosher salt
  • 1/4 tsp. Freshly ground black pepper
  • 1 Thai or serrano chile, seeded and finely chopped
  • 1 1/2 lb. skinless, boneless chicken breast, cut into 1" pieces
  • 2 Tbsp. fish sauce
  • 2 tsp. sugar
  • 1 tsp. soy sauce
  • 1/2 cup coarsely chopped basil leaves, plus more for garnish
  • Cooked brown rice, for serving

Directions

    1. Step 1In a 12" skillet, heat vegetable oil on medium-high. Add 2 cloves garlic, thinly sliced; cook, stirring, until golden. Add green beans, 1/4 cup water, salt, and pepper. Cook 4 to 5 minutes or until beans are crisp-tender and water has evaporated, stirring frequently. Transfer to bowl.
    2. Step 2In same skillet, heat oil on medium-high. Add chile and remaining 2 cloves garlic, finely chopped; cook until garlic is golden. Add chicken; cook 4 to 5 minutes or until chicken just loses its pink color, stirring occasionally.
    3. Step 3Stir in 2 tablespoons water, fish sauce, sugar, and soy sauce; cook 1 to 2 minutes or until chicken is cooked through (165 degrees F). Stir in basil leaves. Serve with green beans over brown rice. Garnish with whole basil leaves.
