Ingredients
- 2 oz. Pecorino Romano cheese, roughly chopped
- 1/4 tsp. freshly ground black pepper
- 4 Homemade Tortillas or store-bought 8-inch flour tortillas
- 1 Tbsp. olive oil
Directions
- Step 1Heat oven to 375°F. Line 2 baking sheets with parchment paper.
- Step 2In mini food processor, process Pecorino until finely ground (you should have about 1/2 cup). Transfer to small bowl and toss with pepper.
- Step 3Brush 1 side of each tortilla with olive oil. Stack tortillas and cut into 8 wedges. Divide wedges between prepared sheets and arrange in even layer, oiled sides up.
- Step 4Sprinkle evenly with cheese mixture and bake, rotating positions of sheets halfway through, until chips are crisp and golden brown, 14 to 16 minutes (a few minutes less if using store-bought tortillas).
