Ingredients

  • 8 small sweet Italian sausages, about 1 1/2 pounds
  • 1 1/2 cups grape or cherry tomatoes
  • 2 cloves garlic
  • 2 Tbsp. fresh oregano leaves
  • 2 15-ounce cans cannellini beans
  • 1/2 cup dry white wine
  • 1/2 cup low-sodium chicken broth
  • salt
  • black pepper

Directions

    1. Step 1Heat oven to 400°F. Heat a large deep oven-safe skillet over medium heat. Add 1 tablespoon olive oil and 8 small sweet Italian sausages. Brown the sausages on all sides, about 8 to 10 minutes total, and then transfer to a plate.
    2. Step 2Cut the tomatoes in half. Set aside. Chop garlic and fresh oregano leaves. Rinse 2 cans of cannellini beans. Add the garlic and oregano to the skillet and cook, stirring, 1 minute. Add the beans and dry white wine. Bring to a simmer, then simmer for 1 minute.
    3. Step 3To the skillet, add low-sodium chicken broth, halved tomatoes and 1/4 teaspoon each salt and black pepper. Nestle the sausages into the mixture. Then, transfer the skillet to the oven and cook until the sausages are cooked through, about 8 to 10 minutes.
