Ingredients
- 2 (5 to 7 oz.) boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1/4 cup all-purpose flour
- 4 fresh sage leaves, divided
- 2 slices prosciutto
- 2 Tbsp. extra-virgin olive oil
- 2/3 cup dry white wine (or low-sodium chicken broth)
- 1 Tbsp. cold unsalted butter
- 2 (1/4-inch thick) slices BelGioioso Crescenza Stracchino, sliced lengthwise
Directions
- Step 1Pat chicken breasts dry and pound between 2 sheets of plastic wrap to ½-inch thickness. Season with salt and pepper and lightly coat in flour. Place 1 sage leaf on each chicken breast and lay 1 slice of prosciutto on top.
- Step 2Heat oil in a large cast-iron skillet over medium-high heat. Add remaining 2 sage leaves and fry, about 1 minute per side, until just crisp. Transfer to a paper towel-lined plate. (The leaves will crisp further.)
- Step 3Carefully place the assembled chicken breasts into the pan, prosciutto side down. Cook 3 to 4 minutes until golden, then flip and cook on the opposite side for an additional 3 to 4 minutes until golden. Transfer chicken to a plate.
- Step 4Off heat, add the wine (or broth) to the pan and scrape with a spoon or spatula to loosen the browned bits. Reduce heat to low and cook until the wine has reduced by about 1/3, 2 to 3 minutes. Stir in the cold butter until melted. Return the chicken to the pan, prosciutto side up, cover, and simmer until the chicken registers 165 degrees when inserted with an instant-read thermometer, 2 to 3 minutes. Top each breast with 1 slice of Crescenza Stracchino, cover again, and cook until the cheese has melted, about 1 minute. Garnish with the fried sage. Serve immediately.
