Popovers are crispy on the outside and hollow on the inside, and they make a great side at brunch and dinner parties. In fact, the popover has been GH's signature pastry for decades, having been served in the Good Housekeeping Dining Room to presidents, first ladies, royalty and movie stars. Follow these simple steps to make your own! Serve them fresh from the oven, or make ahead and reheat in a 400º oven for 15 minutes.

- 2 cups milk
- 6 Tbsp. butter or margarine, melted
- 2 cups all-purpose flour
- 1 tsp. salt
- Step 1Preheat oven to 375º. Grease well with melted butter or vegetable oil 8 deep 7-ounce pottery custard cups (or 12 2 1/2 x 1 1/4-inch muffin-pan cups). Set greased custard cups on jelly-roll pan for easier handling.
- Step 2In large bowl, with mixer at low speed, beat eggs until frothy; beat in milk and melted butter until blended.
- Step 3At low speed, beat flour and salt into egg, milk and butter mixture. Or, combine all ingredients in blender; blend until smooth.
- Step 4Pour about 3/4 cup batter into each prepared custard cup (or fill muffin-pan cups half-full). Bake 50 minutes, then quickly cut a small slit in the top of each popover to let out steam; bake 10 minutes longer.
- Step 5Immediately remove popovers from cups, loosening with spatula if necessary. Serve hot with butter curls.
