Ingredients

  • 1 Tbsp. coriander seeds, crushed
  • 1 Tbsp. sesame seeds
  • 1 tsp. cumin seeds, crushed
  • 1/2 tsp. coarsely cracked pepper
  • 6 small to medium carrots, split lengthwise and cut into 2-inch pieces
  • 2 Tbsp. olive oil
  • Kosher salt
  • 4 small chicken legs, split (4 thighs, 4 drumsticks)
  • 1 1/4 cups couscous
  • 1 tsp. finely grated lime zest plus 2 Tbsp lime juice
  • 2 scallions, thinly sliced
  • 1/2 cup cilantro, chopped

Directions

    1. Step 1Heat oven to 450°F. Mix together coriander seeds, sesame seeds, cumin seeds, and pepper.
    2. Step 2On large rimmed baking sheet, toss carrots with 1 tablespoon oil and 1/4 teaspoon salt. Rub chicken with 1/2 tablespoon oil and season with 1/2 teaspoon salt, then coat in spice mixture. Arrange chicken, skin sides down, on same sheet and roast until chicken is cooked through and carrots are golden brown and tender, 28 to 30 minutes.
    3. Step 3Meanwhile, cook couscous per package directions. Fluff with fork, then toss with lime juice and remaining 1/2 tablespoon oil and fold in scallions, cilantro and lime zest. Serve with chicken and carrots.
