Use frozen or fresh cranberries for this classic Christmas sauce, perfect for pairing with roast turkey and baked ham

Don't be fooled by this simple recipe, this classic port and cranberry sauce can elevate traditional turkey to new heights and is delicious with baked ham on Boxing Day, too. Better yet, it takes just 25 minutes to make and can be prepared up to a month in advance, frozen, and defrosted overnight, leaving you with less to do on the big day itself.

Put cranberries, orange juice, zest and port into a medium pan. Stir to combine. Cover and cook over a low heat for 5min until cranberries are mostly defrosted. Bring to boil, keep covered and simmer for 5min. Stir in sugar, increase heat and simmer uncovered for about 10min until cranberries are soft and sauce is syrupy. Stir in a splash of port before serving if sauce is too thick.
Get Ahead
The sauce can be made up to 2 days in advance and chilled. Or freeze for up to a month. Thaw frozen sauce in the fridge overnight. Remove from fridge 2 hours before serving. Complete recipe.
