- 225 ml milk
- 1 garlic clove, crushed
- 75 g instant polenta
- 25 g finely grated Parmesan cheese
- 1 Tbsp. finely chopped rosemary leaves
- 1 1/2 Tbsp. olive oil
- Step 1Line a small roasting tin or loaf tin with baking parchment. In a small-medium pan bring milk and garlic to the boil. Gradually whisk in polenta, then reduce temperature. Whisk constantly for a few minutes until very thick. Stir in Parmesan and rosemary.
- Step 2Scrape mixture into lined tin and shape to a rough 10 x 16cm (4 x 61/2in) rectangle. Chill to firm up for at least 15min. Preheat oven to 220°C (200°C fan) mark 7.
- Step 3Using parchment paper, lift polenta out of tin and cut into chips about 11/2cm (2/3in) wide. Arrange on a baking tray lined with baking parchment. Drizzle over oil and turn to coat. Season well, then roast for 20-25min, turning occasionally, until golden and crisp. Serve.
