Ingredients
500 g macaroni
40 g butter
1 tsp. Dijon mustard
40 g plain flour
500 ml milk
75 g gruyere cheese, grated
250 g cherry tomatoes
50 g cornichons, (drained weight) rinsed and roughly chopped
75 g pickled silverskin onions, (drained weight) rinsed and halved
150 g Raclette, thinly sliced
Directions
Step 1Preheat the oven to 180°C (160°C fan) mark 4. Cook the pasta in a large pan of boiling salted water according to pack instructions. Drain well.
Step 2Meanwhile, melt the butter and mustard in the empty pasta pan over medium heat. Add the flour and cook, stirring, for 1min. Remove pan from heat and gradually stir in the milk to make a smooth sauce. Return pan to the heat and cook, stirring, until thickened and bubbling.
Step 3Remove from the heat. Stir through the gruyere until smooth, then add tomatoes, cornichons, pickled onions, drained pasta and plenty of seasoning.
Step 4Spoon into a large ovenproof dish (at least 2 litres) and top with the sliced raclette, so that it covers the top of the pasta mixture. Cook in oven for 20min until bubbling. Set aside while you preheat grill to high. Grill for 2-3min until golden.
