The humble lemon drizzle cake needs no introducing and yes you're probably thinking it couldn't be improved upon, but actually, you haven't tried it made within an air fryer before! It is SO moist with a slight caramelised taste and comes together so quickly that it blew our cookery team away when they tested it. Thank us later.

Ingredients
125 g unsalted butter, softened
150 g caster sugar
2 medium eggs, lightly beaten
125 g self-raising flour
Finely grated zest and juice of 2 lemons
50 g icing sugar
Directions
Step 1Preheat airfryer to 160°C. Grease and line the base and sides of a deep 15cm round cake with parchment paper.
Step 2In a large bowl, beat together the butter and 125g caster sugar with an electric hand whisk until pale and fluffy, about 5min. Gradually beat in the eggs. Add the flour and finely grated zest of 11/2 lemons and 1tbsp juice and fold to combine.
Step 3Tip the mixture into the prepared tin and bake in the airfryer for 35min, or until golden, risen and a skewer inserted into the middle comes out clean.
Step 4Meanwhile, stir together 1tsp juice in a bowl with the icing sugar and 2tsp water, cover and set aside. Set aside a a large pinch of zest, then put the rest in a pan with the remaining lemon juice and caster sugar. Heat gently to dissolve.
Step 5Poke the top of the warm cake all over with a skewer, then evenly pour over the drizzle mixture. Leave in tin to cool completely.
Step 6When the cake is cool, remove from tin, peel off parchment and put on a serving plate or board. Beat the lemon icing until smooth (add a few drops of water if too thick), then drizzle over the cake and leave to set. Serve in slices.
