Cloud coffee is so last month – this tiramisu cloud French toast recipe is WAY better 🌩️ ☕️
Your new favourite brunch recipe just dropped 🔥

We loved the cloud coffee trend – light and fluffy whipped cream on top of your iced drink? Yes, please! So, we wanted to turn the same idea into a brunch item… welcome, the cloud French toast.
And why not turn it into everyone’s favourite flavour combo? TIRAMISU! Melt-in-your-mouth, chocolate-flavoured mascarpone adorns a coffee French toast, for the ultimate viral brunch item.
Ingredients
- 2 medium eggs, beaten
- 4 Tbsp. strong espresso, cooled
- 25 g butter
- 4 thick slices brioche
For the topping
- 100 g mascarpone
- 200 g double cream
- 40 g icing sugar, sifted
- 4 tsp. cocoa powder, plus extra for dusting
- 4 Tbsp. milk
Directions
- Step 1In a wide shallow bowl, whisk together the eggs and espresso. Heat butter in a large, non-stick frying pan over low to medium heat. Working one at a time, dip bread slices into the egg mixture to soak, then add to the frying pan (do this in batches if your pan isn't big enough). Fry until golden on both sides. Repeat with remaining brioche.
- Step 2In a medium bowl, whisk the mascarpone, double cream, icing sugar and cocoa powder until smooth. Add the milk and whip to soft peaks.
- Step 3Top each piece of French toast with the mascarpone mixture and dust with cocoa powder. Serve.
If you fancy a stronger coffee taste to your tiramisu French toast, try dusting it with a small amount of espresso powder at the end.
The recipe would also work without the mascarpone, by just whipping up the cream (and leaving out the milk) to soft peaks with the icing sugar and cocoa powder.
If you want to make this boozy, why not try brushing your French toast with a small amount of coffee liqueur once it’s been fried?
