4-ingredient brown butter Mini Egg chunk shortbread recipe
We've turned our most popular sweet recipe into an Easter special.

We’ve taken our favourite Easter treat - Cadbury Mini Eggs - and chopped them into generous, chocolatey chunks to stud this easy, low-ingredient shortbread. As the biscuits bake, the crisp sugar shells and creamy milk chocolate create pockets of sweet crunch throughout the buttery base. Simple to make and perfect for sharing, they’re a fun, colourful twist on a classic bake that’s just as good with a cup of tea as it is packed into a DIY Easter hamper.
Ingredients
- 175 g unsalted butter, plus extra to grease
- 75 g caster sugar
- 250 g plain flour
- 125 g Cadbury Mini Eggs, roughly chopped
Directions
- Step 1Melt the butter in a small frying pan over low heat. Once melted, increase heat to medium-high and cook, swirling the pan occasionally, until the butter is golden brown and smells nutty. Pour into a large heatproof bowl and leave to cool completely.
- Step 2Lightly grease and line a 20cm square tin with baking parchment. Tip the sugar into the butter bowl and mix using a wooden spoon. Stir in the flour until combined, followed by the Mini Eggs. Tip into the prepared tin and press firmly to level with the back of a spoon. Score deeply with a sharp knife into 9 squares. Chill for 30min, to firm up.
- Step 3Preheat oven to 170°C (150°C fan) mark 3. Bake for 30-35min, until pale golden. Remove from the oven and cut into squares along the scored lines, then sprinkle liberally with the 1tbsp sugar. Leave to cool completely in the tin.
GH TIPS:
Store in an airtight container at room temperature for up to 5 days.
This recipe has been adapted from our most popular 4-ingredient brown butter shortbread recipe which uses chocolate chunks instead of Mini Eggs.
