Crisp and gooey 4-ingredient red velvet cookies recipe, stuffed with white chocolate
Eat these warm from the oven and be rewarded with a melting chocolate centre

Want to know how to make the easiest, fuss-free cookie ever? Cake mix! Combined with eggs and oil, you’re a bake (and a short bit off chilling time away) from a chewy cookie with just the addition of a simple ready-made mix. With this recipe, we’ve ramped it up by using a red velvet box and stuffed each cookie with a square of white chocolate for an extra gooey centre.
Ingredients
- 1 red velvet cake mix (we used Betty Crocker red velvet cake mix)
- 2 medium eggs
- 110 ml vegetable oil
- 100 g white chocolate (we used Cadbury's white chocolate)
Directions
- Step 1Combine the cake mix, eggs and oil in a bowl. Cover, transfer to the fridge and chill for 30min.
- Step 2Pre-heat the oven to 180°C (160°C) mark 4. Line two baking trays – you might need three, depending on how big the trays are, as the cookies will spread. Separate the cookie dough into 12 pieces and wrap each piece around a square of white chocolate, making sure they are completely concealed. Transfer to the baking trays and bake for 10min. You might need to bake in batches. Leave to cool on the trays for 5min before transferring to a wire rack and leaving to cool for 5min more.
- Step 3Melt the remaining chocolate. Drizzle over the cookies and transfer to the fridge for 5min to help set the chocolate on top. Serve.
GH TIP: For an extra gooey centre, serve while still warm and skip drizzling with chocolate.
