Ingredients
- 400 ml double cream
- 200 g white chocolate, very finely chopped
- 75 g caster sugar
- 50 ml yuzu juice
- 20 ml lemon juice
- 5 g salted butter
- 3 gingernut biscuits, crushed
Directions
- Step 1Combine the cream, chocolate and caster sugar in a large sauce pan over a low heat, stirring until the chocolate and sugar melt. Increase the heat to a very gentle simmer for about 1min. Immediately remove from the heat and whisk in the yuzu and lemon juice – it will thicken.
- Step 2Divide between six small ramekins, leave to cool, then transfer to the fridge to chill for at least 3hr or until set.
- Step 3Melt the butter in a small frying pan. Add the crumbled biscuits and cook over a medium heat for 2min, stirring constantly, until slightly darker in colour with a toasted aroma. Immediately transfer to a small plate and leave to cool completely. Serve sprinkled over the possets.
