Total Time:
20 mins
Ingredients
- 400 g custard cream biscuits
- 150 g unsalted butter
- 300 g good-quality white chocolate
- 397 g tin condensed milk
- 2 Tbsp. custard powder
Directions
- Step 1First, separate the custard creams (reserving 20 for the topping), scraping the filling into a bowl. Blitz the biscuits in a food processor until you have a fine crumb. Melt half of the butter then combine with biscuit crumb. Line a 20cm square tin with two long strips of baking paper, along the edges to overhang (see tip).
- Step 2Push the biscuit mix into the tin, using the back of a spoon to smooth. Put in the fridge to chill while you make the toppings.
- Step 3Roughly chop the chocolate and set in a heatproof bowl, along with the custard cream filling and remaining butter, over a pan of simmering water. Allow to melt gently then pour in the condensed milk and custard powder, stirring well to combine.
- Step 4Pour on to the base then top with the reserved custard creams. Leave in the fridge to chill for 4-5hr until fully set then slice to serve.
GH TIP
Lining the tin in this way will make it easier for you to lift the slice out – just make sure the bottom of the tin is completely covered with the strips.
