This Medi-inspired snack board is essentially an assembly job once you’ve cooked the lasagne chips. To make it completely no-cook, swap the lasagne for ready-cooked pitta chips or tortilla chips.

- 7 fresh lasagne sheets
- 3 Tbsp. extra virgin olive oil
- 1 tsp. dried oregano
- Flaky sea salt
- 40 g crème fraîche
- 15 g green pesto
- 1 tsp. lemon juice
- 5 prosciutto slices, roughly chopped
- 10 salami slices, roughly chopped
- 150 g stracciatella di burrata
- 2 pepperoncini, stalks removed, drained and chopped
- 6 semi-sundried tomatoes, drained and chopped
- 10 g Parmesan
- Step 1Bring a large pan of lightly salted water to the boil. Add the lasagne sheets and boil for 2min, stirring so they don’t stick. Drain them very well and separate the sheets carefully. Cut the sheets into triangles (around 12 per sheet) and transfer to 2 large baking trays.
- Step 2Preheat the oven to 220°C (fan 200°C) mark 7. In a small bowl, combine the extra virgin olive oil and dried oregano. Generously brush the triangles with the oil and flip them over, making sure both sides are coated. Sprinkle with the salt and bake in the oven for 5min. Flip them over and bake for a further 3-4min until golden – keep a close eye as they can burn easily. Remove from the oven and leave to cool completely.
- Step 3Combine the crème fraîche, pesto and lemon juice. Arrange the lasagne chips on a platter. Top with the prosciutto and salami. Spoon over the stracciatella and the pesto sauce. Sprinkle over most of the pepperoncini and sundried tomatoes. Finely grate over the Parmesan, add the remaining pepperoncini and sundried tomatoes and finish with a final sprinkle of freshly ground black pepper.
GH TIP
Make the lasagne chips up to 48hr ahead and keep stored in an airtight container to retain their crispness.
