Ingredients
4 ciabatta rolls
70 ml olive oil, plus 3tbsp
200 g baby spinach
4 garlic cloves, finely crushed
1 1/2 tsp. chilli flakes
140 g natural yoghurt
2 tsp. lemon juice
2 Tbsp. dill, finely chopped
4 Tbsp. plain flour
2 eggs
50 g panko breadcrumbs
2 Tbsp. sesame seeds
2x 200g blocks feta (the firmer, the better)
2 tsp. honey
Directions
Step 1Heat a large griddle pan over a medium-high heat. Slice the rolls in half and brush the insides with 2tbsp olive oil. Cook the buns, cut-side down, for about 3-4min, until deep brown char lines show, then turn the heat off, flip the buns over and continue to cook for a further minute. Set aside.
Step 2Rinse the spinach and shake off but don’t dry thoroughly – a little moisture will help it to wilt when cooked. Heat 1tbsp olive oil in a large frying pan over a medium heat. Add the garlic and chilli and cook briefly, about 30sec, until fragrant, then add the spinach. Cook for 5-6min, until wilted. Season, then transfer to a sieve placed over a bowl. Combine the yogurt, lemon juice and dill with some seasoning and chill until ready.
Step 3Add the flour with some seasoning to a shallow bowl, lightly beat the eggs in another shallow bowl and combine the breadcrumbs with the sesame seeds in another. Carefully slice the blocks of feta through the centre, making sure they don’t break – a small bit of crumbling on the edge is fine. Lightly toss each feta half in the flour, dip in the egg, allowing any excess to drip away, then coat in breadcrumb mixture.
Step 4Heat remaining olive oil in a large, deep-frying pan until hot. Add coated feta and cook on each side for 2-3min, until golden and crispy, being careful when turning over. Transfer to a plate lined with kitchen towel. Drizzle with honey.
Step 5To build, spread the yogurt on the base half of the buns. Add the spinach, crispy feta and red onion. Top with the bun lid and serve.
GH TIP
For an easy swap, why not try replacing the feta with halloumi? As halloumi is thick, one block should be enough.
