The ruffled edges of the pasta hold on to sweet and spicy sauces, and the wide, al dente ribbons provide the perfect amount of chew. Linguine would work well, too.

Ingredients
350 g mafaldine pasta
3 Tbsp. sesame oil
4 spring onions, finely chopped, whites and greens separated
5cm piece ginger, finely grated
4 garlic cloves, finely grated
2 peppers, deseeded and thinly sliced
500 g pack chicken mince
2 Tbsp. dark soy sauce
1 1/2 Tbsp. honey
1-2tbsp crispy chilli oil, plus extra to serve
2 Tbsp. fresh coriander, finely chopped, plus extra to serve
Directions
Step 1Cook the pasta according to the pack instructions, reserving a mugful of the cooking water for later.
Step 2Meanwhile, heat half the sesame oil in non-stick frying pan. Add the whites of the spring onion, ginger, garlic and peppers and cook over a medium-high heat for 2-3min, until fragrant and the peppers start to soften.
Step 3Stir in the chicken mince and cook for 5-6min, until golden all over. Stir in the remaining ingredients, including the remaining sesame oil but excluding the spring onion greens and extra coriander, and cook for 2-3min, until sticky, saucy and the chicken is cooked through.
Step 4Add a splash of reserved cooking water, then combine the pasta with the mince. Serve in bowls sprinkled with the extra coriander and chilli oil and the greens of the spring onions.
GH TIP
Always reserve some pasta water after boiling and add it to your sauce to give it a glossy shine.
