- 125 g (4oz) unsalted butter, chopped
- 100 g (3 1/2oz) plain chocolate, chopped
- 225 g (8oz) plain flour
- 1 level tsp bicarbonate of soda
- 40 g (1 1/2oz) cocoa
- 175 g (6oz) golden caster sugar
- 200 g (7oz) white chocolate, chopped
- 1 medium egg
- 200 ml (7fl oz) milk
- 150 g pot natural yogurt
- 1 tsp. vanilla extract
- Step 1
Preheat the oven to 190°C (170°C fan) mark 5. Line a 12-hole muffin tin with 12 individual paper cake cases.
- Step 2
Melt the butter and chocolate in a heatproof bowl over a pan of barely simmering water, making sure the base doesn't touch the water. Mix together very gently, then leave to cool a little.
- Step 3
Put the flour into a large bowl. Add the bicarbonate of soda, cocoa, sugar, white chocolate and a pinch of salt. Stir everything together. Beat together the egg, milk, yogurt and vanilla in a jug.
- Step 4
Pour both the egg mix and the chocolate mix on to the dry ingredients, then roughly fold together. Be careful not to overmix the ingredients or the muffins will be tough and won't rise properly.
- Step 5
Divide the mixture among the prepared muffin cases. Bake for 20-25min until well risen and springy. Take out of the tin, still in their cases, and cool on a wire rack.
