Our Test Kitchen uses Diamond Crystal kosher salt, which has lighter flakes than other brands. If your salt is Morton, use about half as much.
An easy, mix-and-match dish that turns odds and ends into a cheesy brunch or dinner.

This cheesy cheddar and spinach frittata is the ultimate clean-out-the-fridge meal that somehow always feels intentional. Toss in a handful of greens—baby spinach, kale or arugula all work (just give sturdier greens a quick sauté first)—and use up any odds and ends of cheese. If you have extra herbs on hand, even better: Parsley, cilantro, and basil are all great here. It’s endlessly adaptable, low-effort and just as good for a quick weeknight dinner as it is for a lazy weekend brunch. Bonus: leftovers taste great warm or at room temperature, making it perfect for meal prep.
Heat oven to 400°F. In medium bowl, whisk together eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Add spinach, scallions, and all but 1/4 cup cheese and stir to combine.
Transfer mixture to pie pan, stir to distribute ingredients evenly, then sprinkle with remaining cheese.
Bake until the frittata is puffed, browned around the edges, and a knife inserted in the center comes out clean, 12 to 15 minutes.
