This pizza has all the appeal of an Italian aperitivo spread. A crisp, golden crust becomes the canvas for creamy burrata, silky ribbons of mortadella, crunchy roasted pistachios, and bright lemon zest. Finished after baking, the result is a pie that’s equal parts indulgent and refreshing.

Ingredients
- All-purpose flour, for dusting
- 1/2 batch Classic Pizza Dough, at room temp for 1 to 2 hr.
- Cornmeal, for dusting
- Olive oil
- 6 oz. burrata, torn
- 2 1/2 oz. thinly sliced mortadella
- 3/4 oz. (about 1 1/2 Tbsp.) salted roasted pistachios, roughly chopped
- 1 tsp. lemon zest
- Flaky salt, for sprinkling
Directions
- Step 1Place pizza steel or stone on top rack of oven and heat oven to 550°F (if your oven doesn’t go that high, heat to its maximum temp).
- Step 2On lightly floured surface, shape pizza dough into 14-inch round or oval. Place on cornmeal-dusted pizza peel (or back of baking sheet). Lightly drizzle with oil. Slide pizza onto pizza steel and bake until crust is golden brown, 9 to 11 minutes. Transfer pizza to wire rack.
- Step 3Arrange burrata and mortadella on pizza. Drizzle with olive oil and sprinkle with pistachios, lemon zest, and flaky salt if desired.
