Note: If you prefer more heat and a super peppery punch, you can increase the amount of black peppercorns up to 2 teaspoons.
This Whole Roast Chicken au Poivre Is Dinner Party Gold
Move over, Marry Me Chicken—this elegant take on steak au poivre is about to become your new favorite.

Think of this as steak au poivre’s lighter, brighter cousin. A whole roast chicken is paired with a luscious Cognac cream sauce studded with crushed black and pink peppercorns—the black for bold peppery bite, the pink for a gentler, fruity warmth that complements the chicken.
A simple dry brine seasons the meat all the way through while ensuring deeply golden, irresistibly crisp skin. The result is a restaurant-worthy dinner that’s surprisingly easy enough for a date night yet impressive enough for your next dinner party.
Ingredients
For roast chicken
- 1 4-pound whole chicken
- 1 Tbsp. olive oil
- 2 Tbsp. unsalted butter, at room temperature
- 3 garlic cloves, lightly crushed
- 5 sprigs thyme
- 1/2 lemon
For au poivre sauce
- 1 Tbsp. unsalted butter, plus 1 Tbsp. cold unsalted butter for finishing
- 1 small shallot, finely chopped
- 1 tsp. black peppercorns (see Note)
- 1 tsp. pink peppercorns
- 1/4 cup Cognac or brandy
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1 1/2 tsp. Dijon mustard
- Kosher salt
- 1 Tbsp. finely chopped chives
- A few lightly crushed pink peppercorns, for serving
Directions
- Step 1Pat chicken very dry. Season all over, including inside cavity, with 1 tablespoon salt. Place uncovered on wire rack set inside sheet pan and refrigerate at least 1 hour, preferably overnight. Remove chicken from refrigerator about 30 minutes before roasting.
- Step 2Heat oven to 425°F with rack in lower-middle position. Pat away any moisture collected on skin; don't rinse chicken. Rub exterior with oil and butter. Place garlic, thyme, and lemon inside cavity. Tuck wing tips underneath bird and tie legs loosely together with kitchen twine if desired. Return chicken to wire rack on sheet pan, breast side up.
- Step 3Roast for 20 minutes, then reduce oven temperature to 400°F and continue roasting until deeply golden and thickest part of breast registers about 155°F and thigh registers about 170°F, 35 to 45 minutes. Transfer chicken to cutting board and rest 15 to 20 minutes before carving. Reserve pan drippings.
- Step 4While chicken roasts, place peppercorns in small resealable bag and coarsely crush using bottom of heavy pan. You want irregular pieces rather than finely ground pepper.
- Step 5Melt 1 tablespoon butter in 10-inch stainless-steel skillet over medium. Add shallot and cook, stirring occasionally, until softened, 2 to 3 minutes. Add crushed peppercorns and cook, stirring, just until fragrant, about 30 seconds.
- Step 6Remove skillet briefly from heat and add Cognac. Return to medium heat and simmer until nearly dry. Once chicken has rested, pour accumulated juices and 1 tablespoon pan drippings into liquid measuring cup. Add chicken stock to measure 1 cup total. Add to skillet and continue simmering until reduced to about 1/2 cup, 5 to 8 minutes.
- Step 7Lower heat and stir in the heavy cream and Dijon. Gently simmer, stirring occasionally, until the sauce lightly coats the back of a spoon, 3 to 5 minutes. Remove from the heat and whisk in 1 tablespoon cold butter and 1/8 teaspoon salt. If sauce becomes too thick while chicken rests, loosen it with a splash of chicken broth or water.
- Step 8Carve rested chicken into breasts, thighs, and drumsticks and arrange on warm serving platter. Spoon some of warm au poivre sauce around and partially over chicken, leaving crisp skin exposed. Serve remaining sauce alongside sprinkled with chopped chives and crushed pink peppercorns.
