Braising red cabbage in Ribena (yes, really!) adds sweetness and creates a quick, crowd-pleasing side dish for Christmas Day

We've developed plenty of red cabbage recipes over the years (after all, it's a must-have at Christmastime), however, this might just be our best yet. It might sound crazy but by slowly braising the red cabbage in Ribena, you bring a sweeter flavour to balance out the acidity of the cider vinegar. A simple but seriously effective side dish for the festive season.

Melt butter in a large, deep pan or casserole with a tight fitting lid. Add sugar and stir over medium heat for 3min until melted. Add cabbage, vinegar and Ribena and toss to coat.
Bring to a gentle simmer, reduce heat to low and cover. Cook for 2hr, stirring cabbage often. Transfer to a warm dish for serving.
Get Ahead
Cook cabbage up to the end of step 2 a day ahead. Cover and chill. Put into a pan with 1tbsp water, cover and heat on a low heat for 10min.
