A simple and delicious way to use up leftover Christmas meats and cheeses

Heat a large frying pan over medium heat. Add a little of the oil to the pan, and one of the tortillas. Evenly sprinkle a quarter of the Cheddar over the tortilla and allow it to melt a little, about 1min.
Arrange a quarter of the turkey, avocado, coriander and feta over the Cheddar and top with another tortilla. Allow to cook for about 1min until golden brown, before flipping over and cooking for a few more minutes until cheese is melted and filling is piping hot. (If your quesadilla is fragile, it can be easiest to slide the tortilla on to a plate, then invert on to another plate before sliding it back into the frying pan.)
Transfer to a warm plate, cover with foil and repeat with remaining ingredients.
Cut the quesadillas into wedges and serve with salsa and green salad, if you like.
