How we test steak

We cooked a range of beef steaks, from rump to ribeye, according to the packet instructions. Our testers were looking for the tastiest meat with a rich, complex flavour profile, regardless of the cut. Fattier cuts scored higher if they had a buttery quality and signs of ageing.

These are our best buys for BBQ season, special occasions and everything in between...

FAQs

What are the different steak cuts?

The most popular cuts of steak in the UK include full-flavoured sirloin, marbled ribeye, juicy rump, and tender fillet. You may also come across well-priced bavette and flat iron cuts, while tomahawk steaks are great for sharing.

What is the best cut of steak to buy at the supermarket?

It all depends on your preference and budget, but here are a few key things to consider.

Fat: Lean cuts such as fillet steak are suited to being cooked rare (beware of over-cooking, which can result in tough meat). However, if you prefer your steak more well-done, the likes of sirloin can handle a slightly longer cooking time while remaining tender.

Ageing: Ageing the meat can add flavour and complexity. Generally, the longer the meat is aged, the more intense the flavour.

Thickness: Thickness is important when it comes to steak, as it affects how long you can cook it for to get that perfect charred crust and juicy centre. Thicker cuts are easier for those who like rare meat, whereas thinner cuts usually result in a medium or well-done steak.

Which steak is the most tender?

Fillet steak tends to be considered the most tender steak you can buy. It’s best pan-fried quickly on each side, for a medium-rare finish.

Is sirloin better than ribeye?

Ask steak lovers to choose, and ribeye will usually come out on top. It’s a tender cut with generous marbling and a rich, indulgent flavour, particularly when cooked hot and fast on the grill.

Sirloin shouldn’t be overlooked, though. Leaner and often more budget-friendly, it offers a robust, beefy taste that appeals to those who prefer their steak with a little more chew.

Is rump or ribeye better?

Again, it comes down to personal preference. Ribeye is often considered a more indulgent choice due to its rich marbling and juicy tenderness. Rump, by contrast, tends to be firmer, leaner but downright juicy – and is normally a little cheaper too, making it a cost-effective buy.
