- 125 g unsalted butter, melted, plus extra to grease
- 4 ripe passion fruits
- 75 ml whole milk
- 2 medium eggs
- 225 g self-raising flour
- 75 g caster sugar
- finely grated zest 1 orange
- icing sugar, to dust
For the sauce
- 75 g caster sugar
- 1 Tbsp. cornflour
- 150 ml milk
- 75 ml orange juice (freshly squeezed if possible)
- Step 1Preheat oven to 180°C (160°C fan) mark 4 and grease a 1.5 litre (22/3 pint) ovenproof serving dish with butter. Halve the passion fruits and scoop the pulp into the prepared dish.
- Step 2Mix melted butter, milk and eggs in a jug to combine. In a medium bowl, mix flour, sugar and orange zest. Add the milk mixture and stir until just combined. Spoon into the prepared dish, on top of the passionfruit pulp, and smooth to level (trying to keep the pulp under the batter).
- Step 3To make the sauce, mix caster sugar and cornflour in a bowl. Sprinkle evenly over the cake batter. Next in a jug mix milk and orange juice (it will curdle). Pour this mixture over the sugar mixture to cover.
- Step 4Bake for 45min or until a skewer inserted into the centre comes out clean. Dust with icing sugar and serve with cream or ice cream, if you like.
