- 2 red onions
- 8 corn cobettes
- 2 medium sweet potatoes, roughly chopped
- 1 Tbsp. vegetable oil
- 175 g pulled ham hock, see GH Tip
- 400 g tin haricot beans, drained and rinsed
For the Barbecue Sauce
- 6 Tbsp. tomato ketchup
- 2 Tbsp. runny honey
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. soy sauce
- 1 Tbsp. Dijon mustard
- 1 1/2-2tsp hot or sweet smoked paprika, to taste
- Step 1Preheat oven to 200°C (180°C fan) mark 6. Halve, peel and slice each onion half into 4 wedges through the root. Put into a large roasting tin or ovenproof serving dish with the corn cobettes and sweet potatoes and mix through the oil and some seasoning. Roast for 30min, mixing halfway through.
- Step 2Meanwhile mix the barbecue sauce ingredients.
- Step 3To the tray/dish add the ham hock, haricot beans and half of the barbecue sauce and mix to coat. Return to the oven for 15min or until the potatoes and veg are tender. Drizzle over the remaining sauce and serve with a green salad or corn bread.
Bought pulled ham hock is often very cost effective, and freezes well too (and defrosts quickly). If you can’t find it, you can ask for thick cut ham at the deli-counter and shred it at home with 2 forks.
