Ingredients
For The Burger
500 g good-quality steak mince
1/2 small onion, finely chopped
1 medium egg
1/2 Tbsp. Dijon mustard
100 g fresh white breadcrumbs
2 Tbsp. sunflower oil
8 cheddar cheese slices
4 burger buns
To Serve, Optional
little gem lettuce leaves
tomato slices
gherkin spears
Directions
Step 1Put the mince into a large bowl and mix in the chopped onion, egg, mustard, breadcrumbs and plenty of seasoning. Divide mixture equally into 4 and shape each portion into a flattened patty. Arrange the burgers on a plate, cover and chill for 30min to firm up a little.
Step 2Preheat oven to 200°C (180°C fan) mark 6. Heat the oil in a large frying pan over medium-high heat and fry the burgers for 8min, turning midway through, until each side is well browned. Transfer to a baking tray and lay a slice of cheese on top of each patty. Cook in the oven for 12min, adding another slice of cheese to each after 6min.
Step 3Meanwhile, toast the buns. Check to make sure the burgers are cooked through and serve in the buns, topped with lettuce leaves, tomato slices and a gherkin spear, if you like. Serve with fries and your favourite sauces.
