- 200 g raw jumbo king prawns, defrosted if frozen
- 125 g chorizo ring
- 4 Tbsp. bourbon whisky
- 3 Tbsp. runny honey
- 1 garlic clove, crushed
You will also need
- 18 cocktail sticks or small skewers
- Step 1First, butterfly the prawns (see GH Tip). Use a sharp knife to cut along the curved back of each prawn, cutting about halfway through. Set aside. Next, skin the chorizo and cut into 1cm-thick slices on the diagonal.
- Step 2In a small bowl, whisk the whisky, honey, garlic and some seasoning. Set aside.
- Step 3Heat a frying pan over medium heat, add chorizo and cook for 2-3min, until the chorizo releases its oil and starts to crisp. Add the whisky mixture, increase heat to high and bubble for 2-3min, until reduced. Add prawns and cook for a further 3-4min, stirring regularly, until prawns are cooked through and coated in the sticky glaze.
- Step 4Remove from heat and leave to cool for 5min (up to 20min) before skewering and serving.
GH Tip
By butterflying the prawns, there’s more surface area for the sticky glaze to cling to. It only takes a few min, but you can leave them whole if preferred.
