Ingredients

125 g butter, chopped
100 ml milk
450 g light brown soft sugar
397 g condensed milk, we used Carnation
250 g mincemeat
75 ml whisky

Directions

1. Step 1In a large, heavy-based, high-sided pan gently heat the butter, milk, sugar, condensed milk and mincemeat, stirring until the sugar dissolves. Bubble gently over low-medium heat, stirring frequently, until the temperature reaches a consistent 115°C on a sugar thermometer, about 15-18min.
2. Step 2Remove pan from heat, add the whisky and mix (careful, it will bubble!). Scrape into a large heatproof bowl and set aside to cool for 5min.
3. Step 3Line a 20.5cm square tin with baking parchment. Using a handheld electric whisk, beat the fudge mixture on medium speed for 6-8min, or until the mixture is thick and has lost some of its shine.
4. Step 4Scrape into the prepared tin, pressing into the corners and to level with the back of a spoon. Leave to set at room temperature, about 4hr.
5. Step 5With the help of the parchment, lift on to a board. Cut into rough 3cm squares and serve.
