Step 1Line 20.5cm square, shallow tin or small roasting tin with baking parchment and sprinkle in the popcorn, followed by the peanuts.
Step 2In a medium pan, gently heat the sugar, golden syrup and 1tbsp water, stirring until the sugar dissolves and the mixture is bubbling.
Step 3Increase heat to medium-high and bubble vigorously, swirling the pan occasionally, until a deep, rich amber colour (or 148°C on a digital or sugar thermometer). Remove pan from heat, add the bicarbonate of soda and quickly whisk in (be careful, it will froth up vigorously). Don’t over-whisk or you’ll knock out the air bubbles.
Step 4Pour into the tin and leave to cool and harden, about 1hr. Break or slice into 24 pieces and serve.
GET AHEAD:
Make up to 2 days ahead; cool and store in an airtight container at room temperature.
GH TIP:
Measure the bicarbonate of soda into a small cup or dish before you start. This makes it easier to evenly sprinkle it into the hot sugar mixture.
