Ingredients
1 vegetable oil
200 smoked bacon lardons
1 onion, chopped
2 red peppers, deseeded and roughly chopped
2 x 400g tins chopped tomatoes
large pinch dried chilli flakes
2 x 400g tins cannellini beans, drained and rinsed
large handful fresh coriander, chopped
Directions
Step 1
Heat oil in a large pan over medium heat and fry lardons for 5-6min until golden. Lift out and set aside, leaving oil in the pan.
Step 2
To the pan, add the onion, peppers and a splash of water. Cook for 10min until softened. Stir in cooked lardons, tomatoes, chilli flakes and 200ml water. Bring mixture to the boil, then cover and simmer for 20min, stirring occasionally.
Step 3
Uncover pan, add the beans and cook for a further 10min. Stir in coriander and check the seasoning. Serve with crusty bread, if you like.
Money saving: We used cannellini beans to save pennies, but this stew is also delicious with tins of mixed beans.
