- 1 red onion
- 1 garlic clove, roughly chopped
- 1 each ground cumin, coriander and cayenne pepper
- 350 (12oz) lean lamb mince
- Small handful fresh mint, roughly chopped
- 1/2 small red cabbage, finely shredded
- 150 (5oz) low-fat natural yogurt
- Juice of 1/2 lemon
- 1 tahini
- 4 pitta breads
- 2 large tomatoes, sliced
- Step 1
Preheat grill to medium. Chop half the onion and put into a food processor with the garlic, spices, lamb mince and most of the mint. Season well and whiz until combined. Divide mixture into eight and form each piece into a round patty. Transfer patties to a non-stick baking tray and grill for 10-12min, turning once, until cooked through.
- Step 2
Finely slice the remaining onion and put into a large bowl with the shredded cabbage. In a small bowl, whisk together the yogurt, lemon juice, tahini and remaining mint. Stir half the yogurt dressing through the cabbage mixture and check the seasoning.
- Step 3
Toast the pitta breads and cut horizontally through the middle to make pockets. Bring pittas, lamb patties, sliced tomatoes, coleslaw and remaining yogurt dressing to the table and let people tuck in.
