- 100 g pack hazelnuts
- 200 g (7oz) dark chocolate (at least 50% cocoa), broken into pieces
- 25 g (1oz) butter
- 142 ml carton double cream
- 3 Tbsp. cocoa, sifted
- 3 Tbsp. golden icing sugar, sifted
- Step 1
Put hazelnuts into a frying pan and heat gently for 3-4min, shaking the pan occasionally, to toast all over. Put 30 nuts into a bowl and leave to cool. Whiz remaining nuts in a processor until finely chopped. Put chopped nuts into a shallow dish.
- Step 2
Melt the chocolate in a heatproof bowl suspended over a pan of just-boiled water (don't allow the bowl to touch the water). In a separate pan, melt the butter and cream together. Bring just to the boil, then remove from heat. Carefully stir into the chocolate. Whisk until cool and thick; chill for 1-2hr.
- Step 3
Put the cocoa and icing sugar into separate shallow dishes. Scoop up a teaspoonful of truffle mix and push a hazelnut into the centre. Working quickly, shape into a ball, then roll in cocoa, icing sugar or chopped nuts. Repeat with remaining mix, then chill. Store in an airtight container in the fridge for up to two weeks.
