Looking for a simple dessert to go with some freshly made custard or vanilla ice cream? These poached plums in Port make a cracking addition to a dinner party.
All you do is create a simple syrup with sugar and water, add in Port (we'd recommend ruby Port to complement the rich plum notes) and cook until the plums are tender. You can keep them whole or halve them, depending on how you'd like to present them.

Ingredients
75 g golden caster sugar
2 Tbsp. Port
6 large plums, halved and stoned
1 cinnamon stick
Directions
Step 1
Put the sugar in a pan with 500ml water. Heat gently until the sugar dissolves. Bring to the boil and simmer rapidly for 2min without stirring.
Step 2
Stir in the port. Add the plums to the pan with the cinnamon stick and simmer gently for 5-10min until the fruit is tender but still keeping its shape.
Step 3
Remove the plums and set aside, discarding the cinnamon. Simmer the syrup until it's reduced by two-thirds. Serve the plums warm or cold, drizzled with syrup and a scoop of vanilla ice cream alongside.
GH TIP:
Enjoy with a glass of Port to really enhance the flavours.
You could also add some star anise to the syrup, if you like.
