- 2 medium baking potatoes, thinly sliced
- A little freshly grated nutmeg
- 600ml (1 pint) good quality ready made white sauce
- Half a 390 g can Eazy Fried Onions (available from major supermarkets)
- 250 g (9oz) frozen peas
- 450 g (1lb) cooked chicken, shredded
- 20 g pack garlic butter, sliced
- A little butter to grease
- Step 1
Preheat the oven to 180°C (160°C fan) mark 4. Layer half the potatoes over the base of a 2.4 litre (4¼ pint) shallow ovenproof dish and season with the nutmeg, salt and freshly ground black pepper. Pour the white sauce over and shake the dish, so it settles through the gaps in the potatoes.
- Step 2
Spread half the onions on top, then scatter over half the peas. Arrange chicken on top, then add remaining peas and onions. Finish with remaining potato, arranged in an even layer, and dot with garlic butter. Season with salt and ground black pepper.
- Step 3
Cover tightly with buttered foil and cook for 1hr. Turn the heat up to 200°C (180°C fan) mark 6, remove the foil and continue to cook for 20-30min until the potatoes are golden and tender. Serve with freshly steamed vegetables and, if you like, some granary bread to mop up the juices.
