- 200 g (7oz) medium egg noodles
- 1 tsp. sesame oil
- 400 g (14oz) skinless chicken breasts
- 1 1/2 tsp Chinese five-spice powder
- 1 Tbsp. vegetable oil
- 2 red peppers, deseeded and sliced
- 5 spring onions, thinly sliced
- Large handful beansprouts
For the sauce
- 2 1/2 cm (1in) piece fresh root ginger, grated
- 2 garlic cloves, crushed
- 1 Tbsp. cornflour
- 1 1/2 tbsp oyster sauce
- 1 1/2 tbsp tomato ketchup
- 2 Tbsp. light soy sauce
- Step 1
Start by making the sauce. In a small bowl, mix together the ginger, garlic and cornflour. Whisk in the remaining sauce ingredients and set aside.
- Step 2
Bring a medium pan of water to the boil and cook the noodles according to packet instructions. Drain well, then toss through the sesame oil to stop them sticking together and set aside.
- Step 3
Cut the chicken into finger-sized strips and put into a large bowl. Toss through the five-spice powder and some seasoning.
- Step 4
Heat the oil in a large wok until smoking. Add chicken and stir-fry for 5min until golden and cooked through - if you find the chicken is sticking, add a splash of water. Add peppers, spring onions and beansprouts; cook for 1-2min until just wilted. Add noodles and sauce; heat through. Check seasoning and serve.
