- 1 (3lb) floury potatoes, peeled and sliced into thin strips
- 3 Tbsp. sunflower oil
- 500 g (1lb 2oz) pork mince
- 1 Tbsp. light soy sauce
- 1 Tbsp. hot chilli sauce (we used Encona Hot Pepper Sauce)
- 1 tsp. white wine vinegar
- 2 tsp. caster sugar
- 1 gem lettuce, leaves separated
- Sweet chilli sauce, optional, to serve
- Step 1
Preheat oven to 200°C (180°C fan) mark 6. Put all the potato strips into a large bowl and toss through 2½tbsp of the oil and plenty of seasoning. Divide strips between two large non-stick baking trays and spread out as much as possible. Cook in oven for 45-50min, turning occasionally, until golden and tender.
- Step 2
Meanwhile, put pork mince, soy sauce, hot chilli sauce, vinegar, sugar and some seasoning in a large bowl and mix thoroughly. Shape mixture into four equal, flattened patties.
- Step 3
Heat the remaining oil in a large frying pan over a medium heat and fry the burgers for 15-18min, turning occasionally, until cooked through. Remove from heat and cover loosely with foil to keep warm.
- Step 4
Serve each burger on lettuce leaves, drizzle over any pan juices, then serve with the chips and some sweet chilli sauce, if you like.
