Total Time:
2 hrs 50 mins
- 2 onions, chopped
- 5 garlic cloves, peeled
- 75 g (3oz) fresh root ginger, peeled and roughly chopped
- 2 red chillies, deseeded and chopped
- 3 Tbsp. oil
- 2 Tbsp. mild curry paste (we used Patak's Mild Curry Paste)
- 3 thyme sprigs
- 750 g goat or mutton shoulder, cut into 2.5cm (1in) chunks
- 400 g (14oz) tin chopped tomatoes
- 500 ml (17 fl 0z) lamb or chicken stock
- 500 g (1lb 2oz) potatoes, chopped
- bunch fresh coriander, chopped
- Step 1
Put onions, garlic, ginger and chilli into the small bowl of a food processor. Whiz to a purée. Heat oil in a large flame-proof casserole (that has a lid) and fry purée, curry paste and thyme for a few min.
- Step 2
Add goat or mutton and fry, stirring occasionally, for 5min. Stir in tomatoes and stock. Bring to the boil, cover and simmer for 21/4hr.
- Step 3
Remove lid and add potatoes for final 30min of cooking. Check meat is tender – if not, cook a little longer. Discard thyme sprigs. Check seasoning, stir through coriander and serve with rice, if you like.
