This delicious mac & cheese recipe isn't like a typical mac & cheese. We've melted down cream cheese and tangy goat's cheese to create the sauce, and mixed through a jar of shop-bought caramelised onion as a speedy hack.
Plus, no more tears from cutting up onions! This is comfort food at its finest.

Ingredients
350 g macaroni
225 g Philadelphia cream cheese
150 g soft goat's cheese, rind removed and crumbled
3 thyme sprigs, leaves picked, plus extra to garnish
75 g caramelised onion chutney
Directions
Step 1
Bring a large pan of water to the boil and cook pasta according to pack instructions. Drain, reserving a cupful of cooking water. Tip pasta back into empty pan.
Step 2
Meanwhile, gently heat cream cheese, most of the goat’s cheese, the thyme leaves and some seasoning in a small pan until melted and combined, stirring occasionally.
Step 3
Preheat grill. Stir sauce into drained pasta with enough reserved pasta cooking water to loosen to a sauce consistency. Check seasoning.
Step 4
Tip into a 1.6 litre ovenproof dish and dollop the chutney over the top. Sprinkle over the remaining cheese. Grill until golden and piping hot. Garnish with extra thyme leaves and serve.
