- 2 very ripe bananas
- 2 medium eggs, lightly beaten
- 4 Tbsp. tahini
- 1 tsp. vanilla paste
- 4 Tbsp. maple syrup
- 100 g (3 ½oz) gluten-free rolled oats
- 100 g (3 ½oz) raw buckwheat
- 75 g (3oz) mixture of seeds
- 50 g (2oz) sesame seeds
- 50 g (2oz) blanched almonds, roughly chopped
- 50 g (2oz) pitted dates, roughly chopped
- 25 g (1oz) dried goji berries or dried cranberries
- 50 g (2oz) dark chocolate (at least 70%), melted (optional)
- Step 1
Preheat oven to 190°C (170°C fan) mark 5. Line a 23cm (9in) square tin with baking parchment.
- Step 2
In a large bowl, mash the bananas and mix in the eggs, tahini, vanilla and maple syrup until well combined. Add the remaining ingredients and stir to coat everything well. Transfer this mixture to the lined baking tin and press to an even thickness.
- Step 3
Bake for 25-30min until golden and turning crispy. Score into 10 bars while the bake is still warm, then allow to cool completely in the tin.
- Step 4
Once cool, cut into bars and drizzle with the melted chocolate, if you like.
