Ingredients
FOR THE PICKLED ONIONS
1 Tbsp. caster sugar
2 Tbsp. white wine vinegar
1 red onion, finely sliced
FOR THE DRESSING
1 Tbsp. balsamic vinegar, see GH TIP
1 tsp. caster sugar
2 Tbsp. extra virgin olive oil
FOR THE SALAD
750 g mix of tomatoes, see intro
150 g feta, crumbled
Large handful basil, leaves picked and shredded
Directions
Step 1For the pickled onions, in a shallow bowl, mix the sugar, vinegar and a large pinch of salt until the sugar dissolves. Stir in the onion and set aside for at least 10min (up to 1hr), stirring occasionally.
Step 2Strain the pickling liquid into a large serving bowl (set onions aside). Add the dressing ingredients and plenty of seasoning to the pickling liquid and whisk to combine.
Step 3For the salad, roughly chop the tomatoes and add to the dressing bowl along with the red onion, feta and basil. Gently toss to combine and check seasoning. Serve.
GH TIP A good-quality balsamic vinegar will marry all the flavours beautifully here.
