Ingredients
100 g unsalted butter
200 g marshmallows
75 g pistachio cream/crème
150 g Rice Krispies
For the caramel
115 g unsalted butter, chopped
115 g caster sugar
65 g golden syrup
230 g condensed milk
For the topping
300 g white chocolate
50 g pistachio cream/crème
45 g pistachios, roughly chopped
Directions
Step 1Line a 20cm square tin that’s at least 4cm deep with clingfilm. Melt butter in a large pan over medium heat. Add marshmallows and stir until melted and combined. Remove from heat and stir in the 75g pistachio cream/crème and cereal.
Step 2Meanwhile, for the caramel, in a large pan gently heat the butter, sugar, golden syrup and condensed milk, stirring until the sugar dissolves. Increase heat to medium and bring to the boil, stirring. Reduce heat and simmer for 8min, stirring constantly, or until thickened and a rich caramel colour.
Step 3Pour over the Rice Krispie layer. Leave to set at room temperature, about 1-2hr.
Step 4For the topping, melt the chocolate in a heatproof bowl set over a pan of barely simmering water. Remove from the heat and stir in 50g pistachio cream/crème. Pour over the firm caramel and smooth to level. Scatter over the pistachios and leave to set until solid (chill, if needed). Serve in squares.
GH TIP:
Keep in an airtight container at room temperature for up to 3 days.
