3 Tbsp. dark soy sauce
2 tsp. runny honey
1 Tbsp. sesame oil
400 g cooked/leftover turkey, shredded
3 cm piece fresh root ginger, peeled and grated
3 garlic cloves, crushed
300 g dried udon noodles
2 pak choi, roughly chopped
Finely grated zest 1 orange
4 spring onions, finely sliced
40 g roasted peanuts, chopped
Directions
Step 1Make the sauce; finely grind the Sichuan peppercorns using
a pestle and mortar. Tip into
a medium jug and mix in the
Chinese five spice, stock, chilli
oil, peanut butter, tahini, rice
vinegar, soy sauce and honey.
Mix to combine and set aside.
Step 2Heat the oil in a large

pak choi for the final 4min of
cooking. Drain.
Step 4Add the sauce to the
turkey pan and bring to the
boil. Simmer for 2min and
add the orange zest.
Step 5Add the drained noodles
and pak choi to the pan and
