Ingredients
250 g self-raising flour, plus extra to dust
175 g natural yogurt
125 g ricotta
1 tsp. dried chilli flakes, plus extra to sprinkle
1 Tbsp. honey, plus extra to drizzle
Finely grated zest 1/2 lemon
200 g tenderstem broccoli, trimmed
1/2 Tbsp. olive oil
Grated Parmesan, to serve
Directions
Step 1In a large bowl, mix the flour, yogurt and plenty of seasoning until the mixture comes together to form a dough. Tip out on to a lightly floured surface and knead for a couple of min, until smooth. Leave to rest for 5min. Preheat oven to 220°C (200°C fan) mark 7.
Step 2Mix together the ricotta, chilli flakes, honey, lemon zest and plenty of seasoning in a bowl. Toss the broccoli with the oil and plenty of seasoning.
Step 3Roll the dough into a roughly 28cm circle. Transfer to a large baking sheet that’s been lined with baking parchment. Spread over the ricotta mix, leaving a small border. Arrange the broccoli on top.
Step 4Cook for 20min, until golden and crisp. Drizzle over a little extra honey and sprinkle over some chilli flakes and the grated Parmesan to serve.
GH TIP
Make extra of the dough and freeze in an airtight bag.
